Evaluation on physicochemical properties of virgin coconut oil obtained by non-thermal processing technology

For evaluating virgin coconut oil (VCO) quality, the physicochemical properties are commonly used as key parameters. In this study, several parameters such as humidity, fatty acids, peroxidation index, saponification, iodine index were analyzed. Using Gas Chromatography Mass Spectometry (GC/MS), 9 fatty acids were identified, quantified and classified as: total saturated fatty acids (93.55%), total double bond unsaturated fatty acids (5.51%), total polyunsaturated fatty acids (0.94%). The obtained analytical data shows that the quality of VCO produced from this study meets APCC standard.
