Research into the effects of shrinkage phenomenon on drying time of carrot slices

The shrinkage of carrot slices in drying process has been studied and presented in this paper. It is shown that the results of resolving the drying time function estimated by finite-difference method and similarity method during the process of heat and mass transfer in case of considerin much smaller errors than that in case of ignoring the shrinkage.
