The synthesis of α-glucosyl hesperidin from hesperidin

Abstract

Alpha glucosyl hesperidin (AGH) is composed of glucose and hesperidin, a bioflavonoid found in various citrus fruits peels from upcycling resources, has better water solubility and bioactivity than hesperidin to improve absorption and stability. Moreover, α-glucosyl hesperidin has the effect of warming, brightening and improving dark circles under the eyes. The via transglucosylation using cyclodextrin glycosyltransferase (CGTase), the highest hesperidin to α-glucosyl hesperidin conversion yield achieved was 65,3% using 22,5 mU/ml CGTase, and 5% starch (w/v), at 55-60℃ for 8 h. The product of transglucosylation was purified and its chemical structure was determined to be glucosyl-α-(1→4)-hesperidin using. The structures of the compound were determined by NMR and LC-ESI MS spectra.
